[Granola](<https://creatorstoolbox.com/products/granola>) has [added voice typing](<https://x.com/meetgranola/status/2115837013975081208>) on Mac. Granola says it's free, has an unlimited word count, and works in any app.

The default shortcut is the fn key, and Granola needs to stay open for dictation to work. Using that shortcut replaces the macOS globe-key action until you turn dictation off or change the shortcut.
